Enchiladas (Red Sauce Kind)

8 oz. Cream Cheese
8 oz. Sour Cream
Chicken (Either 2 chicken breasts boiled and shredded, or 1 large can of Chicken)
I use the canned Kirkland Chicken from Costco
2 cups of Fiesta Blend Cheese Split into 1 cup increments
1 large can of Rosarita Red Enchilada sauce (or two small cans)
I do NOT like El Paso brand sauce.
8-10 mission tortillas

Mix softened cream cheese, sour cream, chicken and 1 cup of cheese. Roll small amount in tortilla and put in 9X13 pan. Continue until pan is full and all cheese mixture has been used.

Pour enchilada sauce on top, and sprinkle with remaining 1 cup of cheese (more if wanted).

Cook on 350 for 30-35 min.

Alfredo sauce from Kallie

1/2 cup butter
1 cup heavy whipping cream
3/4 c. Parmesan cheese
oregano to taste
pepper to taste

Melt butter in pan over medium/low heat. Add other ingredients gradually while stirring constantly. Mixture will thicken slowly. Stir for about 20 min. or so until desired thickness is reached. Serve over fettuccine noodles. Add chicken if desired.

Teriyaki Chicken from Julie

1 20 oz. can Pineapple rings (drain and save juice)
1/2 c. soy sauce (kikomens)
1 Tbsp molasses
2 Tbsp Brown Sugar
1/4 c. oil
2 Tbsp cider vinegar
1/2 tsp. garlic powder

Mix all ingredients plus pineapple juice

Place chicken in marinate for 6 to 8 hours or overnight

Drain and grill chicken, baste with marinate while cooking.

Grill pinapple rings at the last and serve on top of chicken.

Chicken Enchiladas (white sauce kind)

2 cans cream of chicken soup
8 oz sour cream
4 oz diced green chilies
2 chicken breasts or 1 can of chicken
8-10 tortillas
cheese

Heat soup, sour cream and chilies. Mix in chicken. Fill tortillas w/ mixture and some cheese...roll up.

Top with cheese and remaining sauce.

Bake at 350 for 30 min.

White Bean chicken soup

1 Rotisserie Chicken
1/2 onion sauteed in olive oil
2 cans chicken stock
2 cans white beans
1 can green chilies
1/2 tsp. dried cilantro
1/8 tsp. crushed red peppers
1 tsp. garlic powder
1 tsp. oregano
1 tsp. cumin
Squeeze juice from 1 lime

Shred chicken from rotisserie. Cut up in small pieces. Add remaining ingredients. Simmer on stove top for 25 min.

Serve with sour cream, cheese, avocado, tortilla chips, diced tomatoes.

Lori's Yummy Chicken

Boneless skinless chicken breasts (as many as you need)
Put the chicken on a pan in a single layer (do not stack). Salt and pepper chicken. Put slices of pre-sliced Swiss cheese on top of the chicken. Make cream of chicken mix. For every 1 can of cream of chicken, add 1/3 can of water. So, for 3 cans of cream of chicken soup, add 1 full can of water. Pour the mixture over the cheese. Bake at 350 for 30 min. Put foil over the the pan (after 30 min.) so the cheese doesn't burn. Finish cooking at 325 for another hour. Use the sauce over rice or mashed potatoes. You can also cook at 325 for an hour and a half.
