Delicious Hot Fudge Recipe from Nat

On low heat melt:
1 cube of butter (not margarine)
1/2 bag milk chocolate chips
stir until chips are completely melted.

Turn heat to med and mix in:
1&1/3 cups evaporated milk
2 cups powdered sugar
Bring to boil and boil for 8 minutes, stirring occasionally

After boiling is done add 1 tsp vanilla. Let set for about 5 minutes and ENJOY!!!

Dan's favorite chocolate chip cookie recipe (from Julie)

Cream together:
3/4 c. brown sugar
3/4 c. sugar
1/2 c. shortening
1 stick of Margarine

Then add:
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
2 1/4-2 1/2 cups flour

Don't forget 1 bag of your favorite chocolate chips.

Bake at 350 for 11 min.

Alfredo sauce from Kallie

1/2 cup butter
1 cup heavy whipping cream
3/4 c. Parmesan cheese
oregano to taste
pepper to taste

Melt butter in pan over medium/low heat. Add other ingredients gradually while stirring constantly. Mixture will thicken slowly. Stir for about 20 min. or so until desired thickness is reached. Serve over fettuccine noodles. Add chicken if desired.

Teriyaki Chicken from Julie

1 20 oz. can Pineapple rings (drain and save juice)
1/2 c. soy sauce (kikomens)
1 Tbsp molasses
2 Tbsp Brown Sugar
1/4 c. oil
2 Tbsp cider vinegar
1/2 tsp. garlic powder

Mix all ingredients plus pineapple juice

Place chicken in marinate for 6 to 8 hours or overnight

Drain and grill chicken, baste with marinate while cooking.

Grill pinapple rings at the last and serve on top of chicken.

Chicken Enchiladas (white sauce kind)

2 cans cream of chicken soup
8 oz sour cream
4 oz diced green chilies
2 chicken breasts or 1 can of chicken
8-10 tortillas
cheese

Heat soup, sour cream and chilies. Mix in chicken. Fill tortillas w/ mixture and some cheese...roll up.

Top with cheese and remaining sauce.

Bake at 350 for 30 min.

French Dip by Liz

Pot Roast (not oven roast)
1 box French onion soup mix (use 2 envelopes)
2 cups of water

Put roast in crock pot w/ water. Pour soup on top of roast and in water.

Cook on high until water boils (about 30 min).

Turn to low and cook 4-5 hours.

Julie's strawberry salad

1 package spinach
1 head red leaf lettuce
12 won tons cut into strips when you fry them (produce section won ton wraps)
Julie always uses more
1/4 cup bacon cooked chopped
1/2 cup finely chopped red bell pepper
1 red onion
1 cup strawberries sliced
1 cup sugared almonds

Dressing:
1/4 cup red wine vinegar
1/3 cup sugar
3/4 cup oil
1tsp dry mustard
3/4 tsp salt
3/4 cup strawberry jam

White Bean chicken soup

1 Rotisserie Chicken
1/2 onion sauteed in olive oil
2 cans chicken stock
2 cans white beans
1 can green chilies
1/2 tsp. dried cilantro
1/8 tsp. crushed red peppers
1 tsp. garlic powder
1 tsp. oregano
1 tsp. cumin
Squeeze juice from 1 lime

Shred chicken from rotisserie. Cut up in small pieces. Add remaining ingredients. Simmer on stove top for 25 min.

Serve with sour cream, cheese, avocado, tortilla chips, diced tomatoes.

Caramel Brownies by Mandi

1 pkg. German chocolate cake mix (has to be Betty Crocker)
1/3 c. evaporated milk
1/2 c. melted butter

35 caramels
1/3 c. evaporated milk
1 c. chocolate chips
1 c. chopped nuts (optional)

Mix first three ingredients together. Spread 2/3 of brownie mix in a 9X13 pan. Bake at 350 for 7 min. Meanwhile, melt caramels & evaporated milk. Pour caramel on somewhat cooled brownie mixture. Sprinkle chocolate chips and nuts on caramel. Then piece remaining brownie mixture on top and bake again at 350 for 15-18 min.

Lori's Lemon Cake

1 lemon cake mix
3/4 c. oil
3/4 c. water
3 eggs
1 lemon jello (small pkg)

Bake at 350 for 20 min.

Frosting:
2 c. powdered sugar
2 Tbsp lemon juice
2 Tbsp butter

Put frosting on carefully right when cake comes out of oven. Put dabs of frosting throughout cake before spreading.

Cottage Cheese Salad

1 carton cottage cheese
1 3 oz. pkg. jello any flavor
1 9 oz. tub of cool whip

sprinkle jello into cottage cheese-dissolve. Fold in cool whip.
Add fresh fruit
Example: sliced bananas, crushed pineapple, strawberries...etc.

Julie's Poppy Seed Cake

Mix:
1 lemon cake mix
1 small box lemon pudding
1 cup water
1 cup oil
4 eggs
2-3 Tbsp poppy seeds

Preheat oven to 350.

Grease and flour 9x13 pan

Cook for 30 min or until toothpick comes out clean.

Julie's Egg Casserole

16 eggs
2 cups milk
1/2 tsp. garlic salt
1 cup diced ham (or more)
4 cups grated cheese (or less)
1/2 tsp. onion salt

Mix everything except meat and cheese. Toss in meat. Spread cheese on top evenly. Gently push cheese into eggs with a fork.

Bake for 45 min. at 375.

Lori's Yummy Chicken

Boneless skinless chicken breasts (as many as you need)
Put the chicken on a pan in a single layer (do not stack). Salt and pepper chicken. Put slices of pre-sliced Swiss cheese on top of the chicken. Make cream of chicken mix. For every 1 can of cream of chicken, add 1/3 can of water. So, for 3 cans of cream of chicken soup, add 1 full can of water. Pour the mixture over the cheese. Bake at 350 for 30 min. Put foil over the the pan (after 30 min.) so the cheese doesn't burn. Finish cooking at 325 for another hour. Use the sauce over rice or mashed potatoes. You can also cook at 325 for an hour and a half.

Chris' Famous Spinach Dip

1 pkg. creamed spinach (found in freezer section of grocery store)
1/4 cup mayo
1 pkg. softened cream cheese
Green onions (as many as you like)
9 Tbsp Parmesan cheese divided (1/2 mixed in 1/2 sprinkled on top)

Combine all ingredients and then sprinkle 1/2 of parm. cheese on top.
Bake 25 min. at 350 degrees

Serve with tortilla chips, crackers...etc.

Natalie's Caramel Popcorn

1 cup butter (2 cubes)
1 can sweetened condensed milk
2 1/4 cups brown sugar
1 cup corn syrup

Melt butter over medium heat on stove top. Add all other ingredients when butter is melted completely. Stir constantly until all sugar is dissolved. When mixture begins to boil rapidly (not just around the edges, but completely through mixture) stir and cook 30 more seconds and then remove from heat. Do NOT over cook. The caramel will not be soft if you cook too long.

Pour over 3 (can do 4 but I like mine to be heavily coated) bags of "butter" flavor popcorn. (not movie theater butter, or extra butter, just plain "butter" flavored.

Stir until all pieces are coated evenly. Enjoy! Wait to cool down before eating!

Julie's Brown Rice

1 1/2 cups uncooked white rice
2 cans Campbells beef consomme'
1 can water
onion flakes (a few shakes on top)
pepper (a few shakes on top)
2 Tbsp butter

Prep:
Preheat oven to 375. Combine all ingredients in corning ware dish. Stir over high heat (on stove top) until it starts to boil. Make sure you stir it really well before you put it in the oven to make sure the rice isn't stuck to the bottom of the pan. Put in oven with the lid on for 30 more minutes.

Natalie's Taco Salad

Ingredients:
1 tomato diced
1 lb hamburger
1 can kidney beans
1 can olives sliced
1 head lettuce (cut into salad-size pieces)
1 cup cheese
1/2 bag tortilla chips (smashed)
1 small onion (tennis ball size)diced
Dressing:
1 cup mayo
1 cup salsa

Brown hamburger with diced onion. Add all ingredients and toss. (serves 12)
